COCONUT CRANBERRY COOKIES

 

1 egg

¼  cup/62.5 ml  coconut oil, melted

1 ¼ cups/320ml oats

½  cup/125ml coconut or ordinary sugar

½  cup/125ml unsweetened dessicated  coconut

½ tsp/2.5ml bicarbonate of soda

¼ tsp/1ml salt

½ cup/125ml dried cranberries

 

Preheat oven to 350F/180C.

Line a baking sheet with baking paper.

Combine the egg, coconut oil and oats and leave to soften for 5 minutes.

Add the rest of the ingredients and mix well.

Use an ice cream scoop to make balls.

Place on the baking tray and press down gently.

Bake cookies for 9-12 minutes until edges are just slightly golden brown.

Allow cookies to cool completely on baking sheet for 10-15 minutes before removing-



CHOCOLATE ENERGY BARS

 

1 cup/250 ml finely chopped dates

1 cup/250 ml chopped nuts

¼ cup/62.5ml dessicated coconut

1 TB/15ml chia seeds

3 TB/45ml unsweetened cocoa powder

1 TB/15ml melted coconut oil

¼  cup/62.5ml dried goji berries or cranberries

 

Combine all ingredients, mixing well until it clumps together.

Press mixture into a silicone loaf pan.

Refrigerate until firm.

Cut into bars.
