  COCONUT CRANBERRY COOKIES   1 egg ¼  cup/62.5 ml  coconut oil, melted 1 ¼ cups/320ml oats ½  cup/125ml coconut or ordinary sugar ½  cup/125ml unsweetened dessicated  coconut ½ tsp/2.5ml bicarbonate of soda ¼ tsp/1ml salt ½ cup/125ml dried cranberries   Preheat oven to 350F/180C. Line a baking sheet with baking paper. Combine the egg, coconut oil and oats and leave to soften for 5 minutes. Add the rest of the ingredients and mix well. Use an ice cream scoop to make balls.
